Rob - It's a very good question but a hard one to answer - I can't remember when I last carved through a sanded surface.
I would think that the bigger the grit particles left in the wood, the more damage you'll do to the edge of your carving tool; so, if you've ended with the finest grit, that's 'preferable'. The grit is going to be right at the surface so you may like to use just one gouge to clear that surface away, and then check the edge on a clean bit of waste wood. Once into the wood you are good to go.

Chris, how much does sandpaper residue foul gouges? Enough to go back to a fine stone, or just strop again?
