The cuffs are a tricky part of the carving, and your cuffs could well look different to mine. Whatever they look like, you need to get a good sense of how they 'work' and show this clearly. In other words, how the opening of the cuff arises from a single point and splits, and how the two edges of the open cuff relate to each other.

At this stage of the woodcarving, you should not have undercut anything. All that - and undercutting is a fair bit of work - will come later.
