Chris - Yes, the inside bevel is de rigeur. It's especially good on sculpture gouges as it adds strength without thickening the bevel beyond the first part. Try it and see. Make both in and out bevel 10-15 degrees with the inside about 1/4 the length of the outer one, thus sitting the cutting edge further towards the middle of the metal.

I am so grateful for this information -- I've been struggling a while with consistent, effective sharpening despite having several books on sharpening. This lesson fills in some critical gaps. I love the A/V approach & having such a skilled presentation. Somehow the info sticks between for me when I watch & listen, rather than reading. Thanks so much.
